It’s fall, it’s morning…..Pumpkin Spice Creamer in my coffee.
Anyone out there a MAJOR pumpkin spice fan like me??
There’s just something about the way it smells and tastes that speaks cool, cozy, fresh mornings. Wearing comfy socks and pajamas. Perfect morning light pours into your perfectly sized window as you snuggle with your kitty (<—- that might just be in my dream world!) and watch the perfectly browned leaves fall off of the trees outside.
That’s right, I’m telling you that you can have ALL of that in this one cup of jo!
I actually tried to create the moment I just described the other day. A small cold front had come in, and I was like AHHHH….fall! I had just sent Cody off to work, and I thought…I think it would be awesomely refreshing to work from the guest bedroom bed today. That bed sits next to a window that gets decent morning light, so in my head I pretty much had the above scenario perfectly planned out + a laptop.
I opened the window, set up my workstation, put some comfy socks on, and went to make my cup of coffee. As I went to sit on the bed, I spilled that cup of coffee all over our WHITE comforter. After cleaning up the mess and putting the comforter in the washer, I sat down (coffee-less) to start writing, and my “leaves falling off of trees” view was actually….the apartments across the street. With a million cars driving by. And the greenest trees ever. And then a knock on my door. And then the washer started spinning out of control. And then Cody came home early to fix some things we’ve been having problems with at our house. And there I was…in a t-shirt, shorts, messy hair, no makeup…and random socks.
Gotta love those moments in life! “Nailed it”!
I TRULY got more of that dream moment in this creamer than I did in real life. This stuff is so good! And healthy….not filled with preservatives, chemicals, and sugar/dairy overload. If you have leftover pumpkin puree, you can also use it to make the Pumpkin Pie Overnight Oats recipe for breakfast the next day!
Each serving is about 1/4 Cup. However, you can adjust the serving size depending on how sweet or strong you like your coffee! Somedays I like less, somedays it’s just the right amount. Once you make the creamer, you can store it in the fridge for about 1.5 weeks! These vintage glass milk bottles are a great and adorable way to store it!
- ¼ Cup Water
- 2 Tbsp Coconut Sugar
- ½ Cup Pumpkin Puree
- 2 Tbsp Pumpkin Spice
- 1½ Cup Silk Coconut Milk
- 1 tsp Vanilla
- 2 Packets Stevia
- Bring the water and sugar to a boil over medium heat. Allow sugar to dissolve into water.
- Lower heat. Add in the pumpkin puree and pumpkin spice. Stir over low heat.
- Remove from heat. Add in ½ cup coconut milk, the vanilla, and stevia. Let cool.
- Once the creamer is nearly cooled, add in the remaining 1 cup coconut milk. Refrigerate and enjoy!
